Michaella Wine is about small batches of high intense flavours. Wines that originate from a vineyard producing fewer bunches of grapes per vine allowing grapes to absorb more nutrients and lead to more concentrated flavours.
These grapes are hand picked earlier keeping the alcohol levels in check, carefully hand sorted, and bucketed into open top bins. Fermentation occurs spontaneously and colour and flavour are extracted gently during the process of punching the cap.
After natural fermentation is complete, the skins are lightly pressed and run off into oak barrels for malolactic fermentation to begin. All processes are carried out with minimal intervention.
The wines are bottled directly from the oak barrels unfiltered to retain maximum flavor.
Every wine created is unique and made with utmost care and attention to detail.
